Just an ask...
I am very new to IT Project Management and was wondering if someone was willing to mentor me/support with up-skilling. I have done lots of theory, but really feel the value would come from contextualising the theory. In the current climate, there are a limited number of projects to jump on to gain this experience and am eager to learn the role and develop the skills and knowledge I will need.

You might want to get ITIL training so you can learn about project management. ITIL Foundation is the most popular ITIL certification for IT service management professionals. ITIL Foundation certification is the entry-level ITIL qualification and is required before you sit any of the higher ITIL certification examinations. You can visit here https://itil-certification.foundation/
I agree with Violet, ITIL Foundation is a useful qualification for IT professionals, even if you are not working in IT service management. It provides a good foundation for understanding service delivery and the processes involved. However, it is not a replacement for a project management qualification, and only essential if you are working in IT service management.
I work in IT and have a mix of ITIL Foundation, PRINCE2, PMP and Certified ScrumMaster certifications. If I were looking now, I would choose to go with Certified ScrumMaster and ITIL Foundation.
